Pectinase: Substrate, Production and their Biotechnological Applications

Pectinolytic enzymes can be applied in various
industrial sectors wherever the degradation of pectin is required for a
particular process. Several microorganisms have been used to produce
different types of pectinolytic enzymes. Microbial pectinases account
for 25% of the global food and industrial enzyme sales and their market
is increasing day by day. Owing to the enormous potential of Pectinase
in various sectors of industries whenever degradation of pectin is
needed, this review broadly focus on types of pectin substances,
pectinase, their production as well as their biotechnologically
potential applications.
